My Collard Greens, I utilize my Bacon, cut up in small pieces, Extra Virgin Olive Oil, add my water and let them cook for a while, don't let them burn, they go down like you are eating a nice smothered T-Bone
. When I first moved to Miami, Florida in 1953, at a young age of 19 years, was the first time I heard of Collards. Met my beautiful lady that became my wife on Jan 15, 1955, when I first met her, her mother cooked some of the best Southern Fried Chicken you want to eat, along with some Collards, sweet potatoes, etc. That is when I first got into collards, I ask my girl friend at that time, what are those weeds you mom is serving?
She laughed, and mentioned Collard Greens. That is when I was introduced to collards. Those weeds became one of my favorite vegetable I really LOVE. Collards contains a lot of Iron, I even grow Collards every year at my residence, I even grew some Yukon Gold Potatoes this year, for the first time. Have a great Day. Vic Wallace
