The athletic department is very limited in how much contact they can have with a prospective student-athlete until you have been cleared by the NCAA, so make that a priority.
You must be enrolled at UNC before you can walkon or play.
You will also have to certify that you are an amateur (also with NCAA.)
Many of these ncaa forms and hoops are things that high school counselors assist with, so if you have contact with yours from high school, see if that person might help (although the next few months are busy ones for high school counselors trying to get their current seniors into colleges.) But you can slog through yourself if you are persistent.
Last note: even though there may be a certain time when student-athletes are invited to walkon and tryout with the team, Coaches are usually willing to listen to talented players and see what they can do at other times during the season.
It's to be expected that walk-ons, talented or not, will start by serving time on the practice squad or scout team -- the players who act like the opposing team for practice the week before each game. You will have to earn the coaches' respect and earn playing time, but it happens every year that walk-ons make their mark. But EVERY college team needs additional bodies.
My advice I would NOT wait until there is a head coach in place. Get your material in to NCAA, get registered, keep up with contact with the coaches (not annoying, but regular contact by email, letting them know when you'll arrive, etc.) and best of luck to you.
