It's overwhelmingly solidified cornmeal mush (like polenta) with ground pork parts and seasoning... if it has any distinctive flavor, it's like a mild pate with sage. It really is very good, and new mothers around here (Southern Delaware) are encouraged to use it when weaning children to solid food, as it's precooked, really pretty bland, very easy to digest, and nutritous.

If you get a chance to go down to the North Carolina high country (like Boone or Ashville) try some livermush with your eggs for breakfast. Same idea, but it uses pork liver exclusively, and has a pronounced liver flavor.

I've watched my kids try to explain scrapple to the urban, Northeastern college friends, and it's funny to watch.

I just kind of shrug off scrapple as flavored, fried polenta...

Now, menudo... that's gross.

Obviously, you took a wrong turn somewhere. We are talking about Delaware, not the South unless you are dumb enough to believe the media ;) who usually don't know where they are let alone anyone else :lol:

Scrapple is the Jersey Turnpike of pork. It includes whatever parts of the pig that are left over after processing. My mother used to feed it to us as children until as the oldest, I learned to read the ingredients. That was the end of scrapple for me.

If Doctor Verbose does show up, be prepared for the additional security that comes with it. And you may also be on the look-out for NJ Gov. Christie, a UD alum and STH.
